Gram's Fairy Tales are all about wishes and a "Wish-Come-True".  The Featured
"Wish-Come-True"   Cupcake is the
"Golden Bird" Pineapple with "Flecks of Gold".

1 8oz can crushed pineapple undrained
1/4 cup light brown sugar
1/2 cupgranulated sugar
1/2 cup butter
1 teaspoon vanilla extract
2 large eggs
1⁄2 teaspoon salt
1 2/3 cups flour

1 teaspoon baking soda

Yield 12 cupcakes approx

Preheat oven to 350 degrees Fahrenheit.
Line muffin tins with cupcake papers.  Combine flour, baking powder, and salt; set aside.  In separate bowl, beat butter until creamy.  Add sugar; beat for 3 minutes.  Beat in vanilla.  Beat in eggs, one at a time.  Gradually, add flour mixture.  Beat in Pineapple aith its juice.

Fill paper lined cupcake tins 2/3 full.
Bake for 15 to 20 minutes until inserted toothpick comes out clean.  Cool completely

Frosting Ingredients
12 ounces cream cheese, room
1/2 cup (1 stick) unsalted butter, room
2 teaspoons almond extract
4 cups powdered sugar
Gold Pearlized Sugar:


Frosting Directions
Using electric mixer, beat 12 ounces cream cheese, 1/2 cup butter and almond extract in large bowl until smooth. Add powdered sugar 1 cup at a time, beating until smooth after each addition.  Frost cupcakes; dip frosting in gold pearlized sugar.
